courgette spaghetti (courgetti!)

No not spaghetti with a courgette sauce. Or even green spaghetti.
This is a courgette that got spaghettied…
Everyone loves this ridiculously quick salad….even those that say ‘I don’t like raw courgettes’ - they do when they try this….And it’s another reason to keep a jar or two of different dressings in the fridge because your meals come together in minutes
We’ve got a spiraliser ( £24 online) but if you don’t then just grate your courgettes lengthways on the single blade of your grater OR slice the courgette vertically and then into ribbons. Then mix in your dressing…

(SORT OF) SALSA VERDE
Today’s salad dressing was what we call ‘salsa verde’ but it isn’t really - we made ours last weekend and its just lots of roughly chopped leftover fresh herbs - we had dill, coriander, parsley and we added crushed garlic, apple cider vinegar, sea salt and pepper and lots of olive oil. Traditional salsa verde also includes chopped capers, cornichons and mustard
I like salsa verde…
- with any salad
- spooned onto a meaty stew
- with scrambled eggs and smoked salmon
- dolloped onto a soup
- blended with a few nuts and spread onto toasted flaxbread (recipe coming)
- mixed into mashed up avocado to make a herbier guacamole
