Parmesan Crisps

Super easy, crunchy snacks - just bake circles of grated parmesan in the oven and you’re away! You can make these nice and thick before bashing them up to make salty croutons or try them wafer thin as we do.  Some people mould them, whilst still warm, around a wooden spoon to make fancy shapes but we like plain old discs of various shapes and sizes… lazy us….

Ingredients:

Parmesan cheese!

Preheat your oven to 180 C

Line a baking tray with parchment paper - we like If You Care

Grate a lump of parmesan. Fine or coursly grated as you prefer for different textures.

Drop spoonfuls of parmesan onto the paper and pat the cheese into thin circles about 2 to 3 inches wide. Make sure none of the circles are touching, the cheese won’t spread much unless you make much thicker circles of parmesan.

Bake in the oven for 5-8 minutes until the cheese begins to crisp and turn golden around the edges. It’s tempting to leave them longer but if they go too brown they taste bitter so watch out.

Let the crisps cool for a minute before lifting each one off and allowing them to cool completely on a wire rack.

You can also do this under the grill or in a frying pan - just be sure they don’t go too brown!

Choose a non stick pan or you’ll never get that cheese off. We only recommend a teflon free pan such as Greenpan or KitchenCraft Ceramic Frying Pan

Tip

Spice up your crisps with some cayenne or black pepper
